I first had squash like this at our son’s house in Florida. He’s a terrific cook and always makes us interesting meals. Our daughter in Massachusettes sent me most of these pictures after visiting us and going home and making it for her family. According to her husband, it gets a “Thumbs Up!” This recipe is an A+! What a Spaggetti Squash looks like
Place cut pieces in either a 4 or 6 qt. dutch oven; add about 1/8 cup of water to let the squash steam; cover, using your stovetop, start on medium heat and reduce to low when lid “puffs” It will take about 30-45 minutes to cook after reducing the temperature
After cooking, take out each piece of cooked squash and using 2 forks, shred the squash into long piecesAfter it is all shredded, you will have it use the same way you would any pasta; for lasagna, or like angel hair pasta
You can mix in a refrigerated pesto sauce for a very delicious meal. Just heat and serve. I love this Pesto from Sams Club. This is the one I use., but I find that you can use shelf pasta, also, like the one from Aldi’s.
